Almond Seera
Ingredients:
3 cups hot milk, 250gm ghee, 1 ½ cup almonds (soaked overnight), ½ cup sugar
Method:
Peel off the skin of all almonds and wash them nicely. Now grind them in a grinder to prepare a nice paste.
Heat ghee in a pan and fry this prepared almond paste in pan over medium heat. Stir-fry till the paste turns golden brown in color.
Now add warm milk to the almond paste and stir nicely. When mixture starts becoming thick, add sugar to it. Cook for 5 minutes more.
Keep stirring till ghee gets separated. Your almond seera is ready, transfer to serving bowl and serve hot!
Sweet saffron rice
Ingredients:
½ tsp saffron strands, 1 inch stick cinnamon, 3/4 cup rice, 2 tbsp hot milk, 3 cardamom seeds, 45gm clarified butter, 2/3 cup cold milk, 30gm chopped walnuts, 2tbsp cream, ½ cup raisins, 4 tbsp sugar
Method:
First soak saffron strands in a bowl of hot milk.
In a pan, boil rice for 5 minutes. Drain.
Heat butter in a pan and add boiled rice to it along with cinnamon sticks and cardamom seeds for 3 minutes.
Now add cold milk to rice along with sugar and stir gently so that sugar gets properly dissolved.
Cover the pan with lid and cook rice on low heat.
Now add saffron strands and cream to mixture in pan. Cover the pan once gain and let the mixture cook on low heat.
Transfer the dish to serving plate and serve after garnishing it with chopped nuts and raisins.
